Captain Mancini will preset you with a creative experience of fine foods created from his traveling, family, and fine dining hospitality experiences. He takes a lot of pride sharing sustainable foods he endures from his direct relationship with Omega Blue, whom have partnered with artisanal sources, both farmers and fishers, providing the purest, most nutritious seafood on the eastern pacific coast. Pairing you with fine wines, from around the world, and giving you an intimate white table cloth and up close viewing of the galley, while he cooks right in front of you table side! Captain Mancini will also share some gourmet deserts from his Italian childhood and his small batch roast from his coffee beans, grown in the coffee triangle of Pereira and Manizales, Columbia.
